Ingredients:
- 1 cup semolina flour

Instructions:
- In a large bowl, combine the semolina flour, salt, turmeric, cinnamon, cumin, and paprika. Stir to combine.
- Add the olive oil to the bowl and use your hands to rub the oil into the flour mixture until the mixture resembles coarse crumbs.
- Gradually add the water to the bowl, mixing with your hands until a soft dough forms. Divide the dough into 8 equal pieces and shape into balls.
- Place each ball of dough on a piece of cheesecloth. Roll the balls into thin rounds. Stack the rounds and wrap tightly in the cheesecloth.
- Fill a large saucepan with 2 inches of water and bring to a boil. Place a steamer basket in the saucepan and arrange the wrapped balls of dough on top. Cover and steam for 15 minutes.
- Meanwhile, in a large saucepan, heat the oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the carrots, zucchini, chickpeas, cherry tomatoes, raisins, apricots, and broth to the saucepan. Bring to a boil, then reduce the heat to low and simmer until the vegetables are tender, about 20 minutes.
- To serve, unwrap the steamed couscous and fluff with a fork. Serve the vegetable mixture over the couscous, garnished with fresh parsley, if desired.
